Baked Buffalo Wings

My kids LOVE Buffalo wings.  Love, love, LOVE them.  But, they aren't always the most healthy thing in the world.  Most of the time, they are deep fried and breaded.  They just do not fit in our Paleo lifestyle.  Until now.  These wings are easy to make, and my whole family LOVES them.  My kids beg for them.  And if you sub ghee for the butter, they can even be Whole30 compliant!  They can be used as an appetizer, but we usually eat them as our protein with potatoes and veggies of some kind for supper.

Ingredients

3 lbs of chicken wings
2 1/2 tablespoons olive oil
1 tsp salt
1 tsp onion powder
1 tsp garlic powder
1 cup Frank's Red Hot Sauce
1 stick grassfed, organic butter

Directions

Preheat oven to 425 degrees.

You can buy wings frozen already cut, or you can buy regular chicken wings in the meat section.  I usually buy the regular ones because they are cheaper.  If you do this, cut the wings down the middle so you have a drummy and the other part.  I usually cut the bony section with no meat off and throw it away.  If you buy the bags of wing portions, make sure you thaw them first.

In a large mixing bowl, place wings, and add oil, salt, onion powder, and garlic powder.  Toss around to coat wings.  Place wings on rack of broiler pan, skin-side up.  Bake for 35 minutes.

When wings have about 5 minutes left, stir together hot sauce and butter in a small saucepan over low/medium heat.

Remove wings from oven.  Using a tongs, dip wings one at a time in hot sauce mixture and return to broiler pan.  Return wings to oven and bake for another 10 minutes.  Repeat one more time.

Serve with homemade ranch if desired!
